The oil from olives In the period from November to March, our olives are harvested in the olive groves of the family on the heights of Stella in western Liguria, and brought directly to the mill where they are 'cold pressed' by a process of low temperature which ensures the preservation of the organoleptic qualities of the product. With a careful process that is intended to protect both quality and hygiene, we get our extra virgin olive oil characterized by low acidity and a fruity soft and a sweet sensation that makes it popular all over the world. To his great delicacy recommend their use on the finest foods and especially on raw to specialty seafood, of course, is the indispensable ingredient of our Ligurian pesto.
